*Hari mirch mahin kati hui- 1
* Swadanusar
*Papdi- 8
*Boondi- 2 chhota chammach
*Aaloo ubla or kata hua- ek (madhyam akar ka)



O- Banane ki vidhi


ek katore me dahi, poodina pest, imli pest, chaat masala, jeera powder, hari mirch or namak ko acchi tarah mila le . Isme todi hui papdi, boondi or aaloo milaye . Rayta tayar hai .

* Badaam- 25 gram
* Kaaju- 25 gram

* Baasmati chawal (adhpake)- 1 kilogram
* Cheeni- 100 gram
* Doodh- 500 gram
* Creem- 500 gram
* Keshar- ek chutki


O- Banane ki vidhi       

ek pan me dalda dale. Isme flavor ke liye makkhan milay. Isme badaam, kaju or kismish daalkar 2-3 minut ke liye chalaye. Isme adhpake chawal acchi tarah milaye. Sos pan me doodh or cream dalkar 5 Minut ke liye burner per pakaye. Isme cheeni milakar 2 Minute ke liye chalaye. Doodh me keshar milaye or 3 ya 4 minute tak aanch per rahne de. Ab is doodh ko chawlo per dalein. Ise dhak de or paanch minute ke liye aur pakaye. GARM PAROSEIN.

             gajar, mooli aur gobhi ke mausam ka poora  maja uthay, jhatpat achaar bana kar.
             mausami sabjiyo ka achaar banane ki resipy hai,



                            GAJAR KA KHATTA ACHAAR
            

o-samagri

*   gajar - 2 kilogram
*   pisi hui haldi - 50 gram
*   pisi hui raiee - 50 gram
*   lal mirch pisi hui - 50 gram
*   namak - 100 gram(swadanusar)
*   sarso ka tel - 100 gram


o-banane ki vidhi

gajar ko dho kar chheel le aue chhote, per lambe tukdo me kaat le. ek bartan me paani ubaal le aur gas band karde. uble hue paani me se gajar ke tukdo ko 4-5 minute rakh kar nikal le. jab sara paani sookh jay to usme namak, haldi, raiee, lal mirch aur tel milakar acchi tarah mix kar le. jab acchi tarah mix ho jay to ise ek plastic ya kaanch ke jaar me band karke rakh de. 4-5 din baad achaar khatta aur khane layak ho jayga .





       SABJIYO KA KHATTA MEETHA ACHAAR
   


o-samagri

*fool gobhi - 2 kilogram
*gajar - 2 kilogram
*shalgam - 2 kilogram
*adrak - 250 gram
*lahsun - 250 gram
*pyaj - 500 gram
*garam masala(bina dhaniya powder ke) - 100 gram
*degi mirch - 50 gram
*raiee pisi hui - 50 gram
*namak(swadanusar) - 200 gram
*shirka - 1 cup
*gud - 300 gram
*tel - 300 gram



o-banane ki vidhi

gobhi, gajar aur shalgam ko lambe lambe tukdo me kaat le . bartan me paani bharkar ubal le. jab paani khaulne lage to usme gobhi aur shalgam ke kate hue tukde ko daal de aur ubaal aane per gas band kar de .
fir 5 minut ke baad chhalani me chhan ker ek taraf rakh le aur ubli hui sabjiyo ka jo paani bach jaye ushme 2 minute gajar ke tukdo ko daal de. in sabhi sabjiyo me se jab paani sookh jaye unhe ek bade bawl me dale aur unme namak va pisi hui raiee mila de. gas per ek kadhai me tel dale aur jab acchi tarah se garam ho jaye to usme adrak, lahsun aur pyaj ko acchi tarah bhoon le. usme degi mirch daal de. jab acchi tarah se bhun jaye to usme garam masala daal de(yaad rakhe garam masala me dhaniya powder mix nahi hona chahiye) aur is bhune hue misrun ko ubli hui sabjiyo me mila de.n fir usi kadhai me ek cup shirka aur gud ko garam kar sabjiyo me mila de. jab yah thanda ho jaye to ek bade plastic ke dibbe me daalkar band kerke rakh de. achaar tayar ho gaya.
